Cacao 101

Like any good food, the quality of ingredients bears heavily on the quality of the final product. As chocolate is no exception, here at Lovebar we incorporate only the finest cacao beans, cocoa butter and organic sugars. In case your knowledge about those ingredients is a bit fuzzy, here is a cheat sheet:

Cacao-Though “cacao” and “cocoa” are often used synonymously, “cocoa” tends to refer processed powdered products where “cacao” refers to the Theobroma Cacao tree(of the family Sterculiaceae) and the seed(or bean) filled pods that it produces. The pods are filled with a sticky sweet and sour fruit that surrounds the cacao seeds. The fruit must be fermented off of the seeds before they an be used. Cacao beans are the dried partly fermented fatty seeds of the Theobroma Cacao tree, in the American evergreen tree family. The cacao seeds are usually referred to as beans are used in making cocoa powder, chocolate, and cocoa butter.

Cocoa Butter: Cocoa Butter is a pale-yellow, pure edible vegetable fat extracted from the cacao bean. It is used to make chocolate, pharmaceuticals, ointments, and toiletries. Cocoa butter has a mild chocolate flavor and aroma and is the main ingredient in white chocolate and used in all chocolate.
